Introducing the new Diploma in Food and Beverage Management

f&b1f&b2 The School of Hospitality Management (SHM) is set to deliver a new programme, the Diploma in Food and Beverage Management (DFBM), from March 2015 onwards. The DFBM is a two-year four-month (5 long semesters + 2 short semesters) programme designed to equip students with applicable knowledge and skills in foodservice and culinary arts, plus technical and management skills for a career in the global food and beverage industry. Students will gain a deeper understanding of food and beverage cost control, financial success, service leadership and human resource management. Through this programme, students will be able to:

  • manage food and beverage and kitchen operations effectively
  • conduct research and development activities in the culinary arts
  • undertake training in food production and acquire supervisory skills
  • practise and enforce safety, sanitation and food hygiene control
  • adhere to the professional codes of conduct
  • communicate effectively in a multicultural context
